Programming languages IL and ST are described in the handbook https://www.tecomat.com/modules/DownloadManager/download.php?alias=txv00321_02_mosaic_progiec_en, pages 66 - 81. The same information you can find directly in Mosaic help "Programming according to IEC61131-3. Then there are libraries for different tasks and in the help of these libraries there are examples of using of function blocks in ST too. Can you specify what tasks or purpose do you need to figure out? Maybe I will be able to send an example as a Mosaic project archive so that you can unpack it and check with PLC or simulator.

In this video there is shown how to prepare configuration of inputs and outputs, how to name them and how to use them in the program. There are different types of modules but the principle is the same.
